Easiest if sown in fall or very early spring
The leaves have a sparkly magenta color and spinach flavor.
But be careful-it grows to 6' and re-seeds readily-keep it from going to seed. BOTANICAL NAME: Chenopodium giganteum
GROWING INSTRUCTIONS: Start outdoors in very early spring, so that the seeds have a period of moist cold before spring warmth. Or start indoors by refrigerating the seeds in pots of moist potting soil at 40F for 7 days to break dormancy. Plant on 12" centers into prepared beds. Vigorously self-seeds when established, and leaf quality deteriorates when flowering starts, so pinch out flowering stalks or cut down and succession-sow.
