Chicory is a dependable salad and cooking green where there is frost-stands up to winter weather,
slugs, and short days better than lettuce with a different flavor than the cabbages and mustards that dominate fall and winter meals.
BOTANICAL NAME: Cichorium intybus
Start in flats mid-Summer through Autumn. Transplant 12" apart. Makes a splendid winter salad. Give adequate moisture and good sun. Cut heads as needed; they will hold for a while in the garden. Hearts will be milder than large leaves; can tie or cover with a box for even milder taste the last 2 weeks before harvest.
