BOTANICAL NAME: Brassica oleracea var. italica
Start seeds in flats. Transplant seedlings 15" apart into well-prepared soil. Make sure there is good fertility, and the soil is not too acid. Transplant deeper than in the flat, up to the first leaves, and firm in very well. Matures in 8-9 weeks. Start in early spring for an early summer crop, and in late summer for fall. Cut heads when 3-4" in diameter, with dark-green coloring of unopened flower heads. Harvest side-shoots regularly to encourage continued production.
