Large, tender leaves
with deep red centers.
Heat-loving green from Asia that tastes like spinach.
Great in containers. Pinch top when about 6" to encourage bushy growth.
Very tender and succulent when young-plant in succession, harvest when 10-14" tall. Wants heat and moisture.
BOTANICAL NAME: Amaranthus sp.
GROWING INSTRUCTIONS: Start in flats or seed directly after all danger of frost is past, on 6" centers. Likes well-drained soil in good tilth and fairly level (so the small seeds do not wash away). Cover seeds thinly with soil (about 1/8"). To germinate keep soil moist, water moderately. After 3-5 weeks start harvesting leaves, but for continued production don't harvest more than half the plant at once.
