Leaves are broad, tender,
and a deep purple-red on 16" tall plant.

This variety is perfect in stir-fry and soup. Young leaves make good micro or baby greens. They develop their color early and are mild in flavor.
BOTANICAL NAME: Amaranthus sp.
Start in flats or seed directly after all danger of frost is past, on 6" centers. Likes well-drained soil in good tilth and fairly level (so the small seeds do not wash away). Cover seeds thinly with soil (about 1/8"). To germinate keep soil moist and be careful not to disturb the seeds when watering. After 3-5 weeks start harvesting the top 4-6" of the plant. For continued production harvest often, taking less than half the plant each time.
