This is the main flavor in the famous "Herbs de Provence" blend from Southern France.
Adds "savor" to any main dish, vegetable, or soup. Makes a delightful tea, reputed to be aphrodisiac. Cook with beans to add flavor and reduce flatulence.
BOTANICAL NAME: Satureja spp.
Sow seed shallowly in flats and transplant 6" apart into an area with full sun and well drained, well prepared soil. Summer Savory is easily grown from seed, and is faster growing than most herbs. Likes light soil, full sun, and low to average watering. Slow growth means the soil is too dry or cold. Harvesting can start when plants are 5" high and continues all summer. For best flavor do not allow to flower. Annual that grows to 18".
