This fennel has two uses. 

For the large white root bulb which is considered a gourmet item, grated onto salads or braised as a vegetable.

Second, the chopped "leaves" can be used to flavor salads, stews, and vegetables. Has a slightly more delicate flavor than common fennel. 

Beautiful in the garden, and a great attractor of butterflies and pest-eating beneficial insects.
