What to plant for the animals?

Fodder crops are selected for fast growth, high nutrition, and availability in quantity.

They will not be as uniform or as tender (or bolt-resistant) as named varieties selected for garden use.

Animals don't care if the kale is tough, but they do care for (and seek out) the highest levels of nutrients.
